  • Chocolate – Salted caramel, dark chocolate crèmeux, cocoa powder, roasted hazelnut
  • Infinitely Pistachio – House-made salted honey roasted pistachio paste, pistachio mousse with roasted pistachio bits and kinako
  • Caramel Banana – Banana compote, hazelnut praline, caramel mousse, banana brûlée
  • Citron Yuzu – Citron yuzu mousse with yuzu bits and yuzu peel
  • Jasmine Grapefruit – Jasmine crèmeux, grapefruit tea jelly, grapefruit slice
  • Cheese Baked Hojicha – Our take on a cheese baked tart, best consumed warm – 170°C preheated oven or airfryer for 30-45s
  • Passionfruit Meringue – Passionfruit jelly, passionfruit curd, torched meringue
  • Black Sesame Dulcey Kinako – Black sesame praline, black sesame dulcey mousse, kinako crumble
  • Pecan Vanilla Crème Brûlée – Pecan praline, vanilla crème brûlée

Please take note that the caramelised sugar in the crème brûlée and banana brûlée tart will turn watery due to the humidity in the fridge. We still decided to go with it as the burnt sugar taste is still retained.

  • An ispahan tart filled with raspberry jelly, juicy lychee bits, Valrhona Ivoire lychee mousse, tangy raspberry Valrhona Ivoire ganache topped with a light rose cream
  • A Mont-Blanc inspired tart filled with Burgundy black currant coulis, fragrant hojicha ganache(made using Craft Tea Fox’s tea powder), rum-infused chestnut mousse and chestnut cream
  • A dulcey tart with a layer of gianduja dark chocolate crunch layer, Valrhona Dulcey(caramelised white chocolate) ganache, Rémy Martin cognac infused caramel, roasted hazelnut
  • A lemon tart filled with a layer of jellied lemon coulis, refreshing lemon cream, a zesty-silky lemon curd finished with torched & reduced sugar meringue

Box of 6 Assorted Double Valrhona Brookies


A box of 6 consists of:

  • 2x Original double Valrhona brookie, topped with Valrhona Caraïbe 66% feve and Maldon salt flakes
  • 2x Double Valrhona salted caramel chip brookie, topped with Valrhona Guanaja 70% feve and Maldon salt flakes (all time favourite!)
  • 1x Double Valrhona Andes mint brookie, topped with Andes mint chip and Valrhona Guanaja 70% feve
  • 1x Double Valrhona chocolate orange brookie, topped with candied orange peel and Valrhona Guanaja 70% feve

We use two different kinds of Valrhona Dark chocolate – Ariaga Noire 59% in the mix and topped with a Caraïbe 66% feve or Guanaja 70% feve.
